- Grilled Rainbow Trout

Butterfly a Rainbow Trout and remove all bones.
Drizzle oil on both sides, salt and pepper to taste and place face down on a
hot clean oiled grill.
- Remove from grill and place face up in an oven
proof pan. Add white wine or stock and a small amount of oil. Finish in
the broiler (do not overcook).
- Add an avocado salad made up of diced cucumber,
tomato, red onion and, of course, avocado.
